Tuber Magnatum Pico (White Truffle)
The highly acclaimed white truffle is the most valued, rare and precious variety of truffle as can be seen from it's scientific name, Tuber Magnatum, that is to say “of magnates and nobility”; it only grows in Italy and in Istria which makes it one of the most sought after products for international haute cuisine. It is harvested from 1st October to 31st December with the help of specially trained dogs. It's perfume is unmistakable, strong and unique. It is preferably consumed raw, sliced very finely over many dishes..
Tuber Melanosporum (Highly valued Black Truffle)
The highly valued black truffle (tuber melanosporum) has a more rounded shape and varies in size from that of a small nut to a large potato. It's flavour is so delicious that it fully deserves it's title of “sweet black truffle”. It is preferably eaten after brief cooking but is also exellent raw. It matures during the whole of the winter period especially during the early months.
Tuber Albidum (Bianchetto truffle)
The bianchetto truffle (tuber albidum) rarely reaches dimensions bigger than a large wainut. It's odour is less strong than that of the prestigious white truffle and tends slightly towards the smell of garlic. It is harvested from January to March and is ideal for use in meat dishes and for patès.
Tuber Aestivum vitt (Black summer truffle)
The black summer truffle (tuber aestivum) can be found in many different shapes and sizes. It gives off a delicate and pleasant perfume which is vaguely reminescent of the odour of mushrooms; faint when young and stronger when fully mature. It is a common type of truffle in Italy which can also be found in France, Spain and some countries of Eastern Europe. It is harvested from May until the end of December.
